Recipe description of Dhai Bhindi Cut the tops off the okra and halve lengthways. Heat the oil in a pan, add the okra and fry for 5 minutes. Add the ginger, turmeric and salt to taste, stir well. Add the water, cover and cook for 10 minutes until the okra is tender. Mix the remaining ingredients together. Add to the pan, stir well and serve.
