tablespoons boiling water

to one teaspoon small dried red chillies

g/ 2 oz tamarind, soaked in 150 ml/ quarter pint water

g/ 1 oz butter pinch of asafetida (heeng)

Sambar
Put
the dhal, salt, turmeric, water and celery in a pan and bring to the boil, then
partially cover the pan and simmer for 1 hour. Put the coconut and boiling
water in a food processor or liquidizer and work for 20 seconds. Add the
chillies, cumin and coriander and work until smooth. Stir into the dhal with
the tamarind water and simmer for 15 minutes.
Heat
the butter in a small frying pan, add the asafetida, if using, and the mustard
seeds. When the seeds begin to pop, tip the contents of the pan into the dhal
mixture. Serve hot.
